The Victorinox – Swiss Army 5.6103.15  boning knife is 6 inches long and features a straight, stiff blade with a pointed tip. A stiff boning knife is ideal for boning beef and pork.

Its nonslip Fibrox® Pro handle provides a secure grip while operators remove meat from the bone. To withstand high-volume use, the blade’s high-carbon steel construction maintains a sharp edge. High carbon stainless steel blades hand finished in Switzerland by skilled craftsmen. These blades do not discolor or stain. Each Victorinox knife stamped from a single sheet of metal. After it, the blade  hardened, tempered ground down, polished ,etched and finished.
