Katz Knives Inc was founded in 1991 by Keith Derkatz. Keith designs each knife personally and contracts out to high quality manufacturers in Japan and Spain. Our handle scales have been redesigned to feature an elegant wasp nest honey comb pattern to maximum grip and appearance, available in OD green and tasteful black.
