At only 6 inches long from tip to handle, the extra wide stiff blade is solid and strong making it great for slicing through bone and cartilage around ribs and chops. Stamped construction provides a thinner, lighter blade, and the patented white Fibrox handle is slip-resistant when wet to help you avoid unwanted slips and mistakes. Built to last and proven to perform, the Victorinox 5.6007.15 boning knife is an all around excellent addition to any cutlery set.
A stiff boning knife is good for boning beef and pork, but a very flexible boning knife is preferred for poultry and fish. These HACCP knives are color coded for the following HACCP recognized uses:

– Blue Knife = Fish.
– Green Knife = Produce.
– White Knife = Dairy/Cheese.
– Yellow Knife = Poultry.
